Where is nicoise salad from




















I like to also add some marinated onions which thanks to Teri from nocrumbsleft I now make all the time, and I also like to add something pickled or oil packed like artichokes or like I did in this one, roasted red peppers that were in brine.

It sounds like it would take a lot to prepare but once you know what you would like to add to it, the rest is easy. Make the salad your own. The dressing varies as well from just olive oil and salt and pepper to a full blown vinaigrette which I insist on with some herbs added to it. I also like to add the anchovies to the dressing instead of the platter, but adding them at all is optional. You can toss all the ingredients like you would a regular tossed salad but classically I would say that is not how it was intended to be eaten.
